Join artisan cheesemaker Kristen Allan at The Cookbook Shop, Edinburgh for a relaxed, festive introduction to fresh cheesemaking, with a lovely mix of demonstrations, hands-on making, tasting and plenty of good food.
We’ll explore a few simple ways of making fresh cheese at home, with plenty of opportunities to taste along the way.
During the session, we’ll make and explore:
- Mascarpone — a beautifully simple fresh cheese that’s surprisingly easy to make at home
- Buttermilk ricotta — a decadent ricotta, like no other. Made fresh on the day and tasted while it’s still warm
- Labne — you’ll get hands-on and make your own, with ideas for seasoning and serving it
- Marinated labne balls — I’ll show you how to turn labne into beautiful little festive bites, with a few different flavour ideas
- Whey sodas — a delicious introduction to using the whey left behind from cheesemaking, with some ideas for using whey in your cooking
Then we’ll sit down and eat! Expect a selection of festive food and tastings featuring the cheeses we’ve made, with plenty of time to chat, mingle and enjoy the food.
You’ll leave with new cheesemaking skills, recipes and inspiration to make fresh cheese at home and perhaps a little more confidence to start experimenting with it in your own kitchen.
